4 deer chops, extravirgin olive oil, sage, rosemary,
thyme, marjoram, garlic, vinegar, white wine, salt, pepper, Parmigiano-Reggiano,
Garniture: roast polenta (maize mush).
up vinegar with some minced herbs, let get cold, add salt, pepper and
oil and leave the deer chops soak into it for about 3 hours.
Drain, brown in a pan with some more herbs and cover with a sprinkle
of cooking sauce.
Serve with flakes of Parmigiano-Reggiano and roast polenta.
